I thought of this picture when envisioning the 15 pounds I am aiming to lose…
I am getting ready for something specific so I need to lose 15 pounds before it happens. I was not able to do the cleanse last week as I had planned because it was my husband’s birthday and we also went out of town on Saturday. It was just not good timing SO I am starting that on Sunday. This week I went to the apple orchard and got 1/2 peck of delicious apples (Jonagold, Granny Smith, Mutsu, and Fuji). I went to Kroger and got salad bags (so much more cost effective than buying lettuce and fresh veggies to add), avocados, and also ingredients for this delicious salad my mom told me about. The recipe is posted below. Along with healthy eating, I have been focusing on shedding extra body fat through physical activity. I have been doing 45-65 minutes of Zumba at home every day of the week. I have Zumba Core for Wii and I love it. It comes with a belt so you don’t have to hold the controller the whole time. It also counts your calories. According to the program, I usually burn between 500 and 700 calories. I highly recommend getting the game for Wii or XBox Kinect. Such a fun workout. It is challenging but keeps me motivated to continue day after day. I will post before and after pictures once I have met my goal loss of 30 pounds. Right now I am up to 13 pounds lost, so about halfway there.
Radicchio Salad
This is delicious as an entree.
It is also great with some lime juice and chili powder (instead of the dressing).
SALAD
1 small radicchio
1/2 green bell pepper
1/2 red bell pepper
1/2 slicer tomato
1/2 red onion
1/2 can corn
(portions can be changed according to taste)
DRESSING
4 T olive oil
1/2 T lemon juice
1/2 T sugar
Dice all ingredients for salad (except for corn)
Mix all salad ingredients together
Mix dressing ingredients together in a small dish, add lemon and sugar to taste (amounts are suggested)
Drizzle dressing over salad
Enjoy the healthy, vegan, delicious salad you just made in less than 10 minutes!
